An open-faced sandwich of butter, radishes and fresh herbs is a French countryside breakfast tradition. This recipe gives it a modern twist using soft cheese topped with radishes instead. It’s a great healthy lunchbox filler.
Preparation time: 5 minutes
- 3-4 red radish or French breakfast radish
- 1 small French baguette
- 1tbsp soft cheese, for example Payson Breton
- Handful of lamb’s lettuce
What to do
Slice the radish into quarters.
Cut the baguette in half.
Spread the bottom half of the bread with soft cheese, lay the radish slices on top and sprinkle with a little sea salt.
Add the lamb’s lettuce and the top half of the baguette, et voila!
