Radish, feta and Black Rice Salad

Crunchy radish, salty feta, sweet cashews and earthy black rice combine to make an unusual and delicious salad.  

Serves: 4 (as a side)
Preparation time: 10 minutes
Cooking time: 10 minutes

You’ll need

  • 250g pack ready cooked black rice
  • 2 tbsp Olive Oil
  • 1 tbsp Red wine vinegar
  • Salt & pepper
  • A handful of chopped radishes
  • 100g feta, crumbled
  • A small handful cashew nuts
  • A handful fresh dill, chopped

What to do

Heat the rice according to the pack instructions, tip into a bowl and dress with the oil, vinegar, salt and pepper while still warm.  Leave to cool slightly and then stir in the other ingredients and serve immediately.
